Vegetable Cutlet


Ingredients
  • 3-4 mashed potatos
  • 1/2 cup cooked peas
  • 1/2 cup chopped carrot
  • 1/2 cup chopped beans
  • 1 egg
  • 1 cup bread crumbs
  • 1-2 chopped green chillies
  • 1 tbs chopped ginger
  • 1 tbs chopped garlic
  • 2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 chopped onion
  • 1/2 tsp ground pepper
  • 1 tsp oil
  • salt to taste
  • oil to fry

Procedure
  • Cook all vegetables in steam.
  • Saute onion, ginger,garlic,chilliles, coriander powder,pepper,turmeric powder and garam masala in 1tsp oil.
  • Mix mashed potato,vegetables, sauted onion and salt to taste.
  • Make balls with the above mixture and flatten it with palm to get required shape.
  • Beat 1 egg.
  • Dip the cutlet in egg and then in bread crumbs and fry them.

"C" Shake


"C"arrot  & "C"ashew Shake
Ingredients
  • 1 big carrot
  • 5-6 cashew nut
  • 2 cup milk
  • 3-4 tbs sugar


Procedure
  • In a pressure cooker, add all the ingredients and 1 cup of water and cokke 4-5 whistles.
  • Cool the cooked mixture to room temperature.
  • Blend it in a blender with ice cubes.

Masala chickpea snack

Ingredients
  • 1 cup cooked chickpeas
  • 1 tsp oil
  • salt to taste
  • 1/a tsp chilli powder
  • a pinch of garam masala

Procedure
  • Add all the ingredients except garam masala and microwave it for 1-1.5 min.
  • If you are not using microwave fry the same in a pan.
  • As a final touch add garam masala.

I served this with chopped onion , tomato and coriander leaves, mixed to the masala chickpea.
This is the easiest snack if you have cooked chickpea in the fridge..

Carrot Raitha

Ingredients
  • 1 cup grated carrot.
  • 1 cup yogurt
  • salt to taste
  • 1 chopped green chilli
  • 1 tbs ghee.
  • 1/2 tsp mustard

Procedure
  • Splutter mustard in ghee.
  • Saute the grated carrot and chilli in the same.
  • Take it from the heat and mix it well with yogurt.
  • Add salt to taste.

This is a tasty raitha which my husband prepared for me:)

Rice with Green gram dal

Ingredients
  • 1 cup rice
  • 1/2 cup green gram soaked overnight
  • 1/2 sliced onion
  • 1/2 tsp mustard
  • 1/2 tsp cumin
  • 1 tbs oil
  • 1 chopped green chilli
  • 1 tsp chopped ginger
  • few curry leaves

Procedure
  • Add oil in a pressure cooker.
  • Splutter mustard, cumin and curry leaves.
  • Saute onion, green chilli and ginger.
  • Add rice, soaked green gram and 3 cups of water and salt to taste.
  • Cook the above in the pressure cooker.
