Oats chocolate muffin

  • 1/2 cup plain flour
  • 1/3 cup oats
  • 1 tbs sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon powder
  • salt to taste
  • 1/4 cup black current jam( any jam)
  • 1 egg
  • 1 cup sweet or semi sweet chocolate chips/shavings
  • 1/4 cup canola oil

For topping
  • 1/2 cup melted sweet/semi sweet chocolate
  • 1tbs butter
  • 1/2 tsp instant coffee powder
  • Icing sugar if chocolate is not sweet
  • Milk (adjust milk and icing sugar to get the right consistency)

  • Mix all the dry ingredients.
  • Beat egg , oil and jam.
  • Mix the dry ingredients and wet ingredients with a spoon or spatula. ( You need not beat it for long)
  • Pour the batter in to muffin cups.(Use paper cups within to get clean muffins) Do not fill the batter to the top as the muffin will rise. Fill only 3/4 cup.
  • Microwave for about 2 min.(Depends on your microwave, so check in between so that muffins don't burn)

For topping
  • Melt chocolate and mix butter and coffee powder to it.
  • Add icing sugar if you have used bitter chocolate.
  • Add milk to get the consistency of cream.
  • Dip the top portion of muffin in the chocolate cream.

Apricot Cake...Delicious!


  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 1 cups sugar
  • 1.5 cups all-purpose flour
  • 2 large eggs
  • 1/4 tsp vanilla essence
  • 1/2 Tbsp baking powder
  • 1 cup finely chopped dried apricot
  • 2 tbs brown sugar
  • a pinch of salt

  • Sift together the flour, baking powder and salt, set aside.
  • Put the butter into a large mixing bowl. Beat with an electric mixer and gradually add the sugar. Beat until the mixture is very light and fluffy, 5 to 7 minutes.
  • With the mixer on low speed, add the eggs, one at a time, mixing just until the eggs disappear. Add the flour mixture to the butter mixture, alternating it with the milk, beginning and ending with the flour mixture. Mix lightly only until each addition is incorporated.
  • Add vanilla essence to the mixture and mix well.
  • Mix the apricots and brown sugar and microwave it for about 1 min.
  • Fold in the apricot mixture into the cake mixture.
  • Pour the cake mixture into a buttered cake pan.
  • Preheat cooker without weight and with rubber gasket removed.
  • Reduce the flame to a minimum. Place a small inverted plate or inverted flat bowl in the cooker bottom so that cake pan can be kept on it.(cake pan should not be in direct contact with cooker)
  • Cook until the cake just begins to pull away from the sides of the pan and toothpick comes out clean when pricked into the cake center, 45-50minutes.
  • Cool in the pan for 10 minutes then loosen from the sides with a small knife.

Potato Cheese Puff

  • 1 boiled and mashed potato
  • 2 tbs shredded carrot
  • 1 tbs chopped celery
  • 1 chopped green chilli
  • 2 tbs coriander leaves
  • 1 tbs oil
  • 1 tbs butter
  • 2 tbs chopped onion
  • 1 tsp chopped garlic
  • 3-4 tbs shredded cheese
  • pepper to taste
  • salt to taste
  • 1.5 cups wheat flour/plain flour
  • oil to fry

  • Make a dough with flour, salt and water and keep aside.
  • Saute onion, garlic, carrot, celery and green chilli (remove the seeds before using).
  • Mix the above with mashed potato.
  • Add salt and pepper according to taste and mix butter, coriander leaves and cheese with it.
  • Make small balls of dough and roll it into small round sheets.(as if for poori)
  • Spoon the filling on each sheet and fold it to form half circle.
  • Seal the edges well so that the fillings won't come out on frying. You can use fork to give the design on the edges :)
  • Fry the puff in hot oil.

Apple packets

  • 1 cup chopped apples
  • 3 tbs brown sugar
  • 1 tsp corn flour
  • 1/2 tsp cinnamon powder
  • 3 tbs butter
  • 4 small thin pastry sheet in room temperature

  • Mix all ingredients except pastry sheets and microwave for about 2-3 min(Stir in between)
  • Spoon a tbs of apple filling without much sauce to pastry sheet a wrap in such a way that the filling do not come out.
  • Heat a tawa and place the apple packets on it with the to be sealed side touches the tawa.
  • Cook both sides of the apple packets by turning it on tawa.
  • Apple packets are ready.. :)

Yummy Pizza!

Juicy Yummy Easy Vegetarian PIZZA!!!

For Topping
  • 10 thin slices of Brinjal
  • 2tbs Cubed Onion
  • 2 tbs Capsicum cubed
  • 2 tbs chopped coriander leaves
  • 4 tbs Mozzerella Cheese shredded
  • salt to taste
  • 1 tsp chilli powder

Pizza Sauce
  • 2 big tomatoes
  • 2tbs chopped garlic
  • 1 greenchilli
  • salt to taste
  • 1tsp dry oregano
  • 1 tbs oil

Pizza dough
  • 3/4 cup self raising flour
  • 3/4 cup plain flour
  • salt to taste
  • 1 cup milk
  • 1 tsp dry yeast
  • 1 tbs sugar
  • 2 tbs oil


Pizza dough
  • Mix dry yeast, sugar and warm milk in a mug and keep aside for 5 min.
  • Take a non stick pan which has a thick lid.
  • Mix both flour and salt in the pan.
  • Add the bubbled yeast-milk mix( yeast-milk mix will bubble and rise within 5 min) with the flour mixture and make the dough. Add oil also in the dough and also cover the dough with oil.
  • Flatten the dough with fingers in the pan to cover the bottom of the pan and keep aside for 30 min.

Pizza sauce
  • Puree tomatoes along with salt, green chilli and garlic.
  • Saute the puree with the oil till it reaches a sauce consistency and take off from the flame.

Topping the pizza.
  • Marinate the brinjal slices with salt and chilli  powder and keep aside for sometime.
  • Drain out the water from brinjal slices using ur palm.
  • Roast the above slices in a roasting pan with little oil.
  • Press light the dough with fingers.
  • Spread the sauce on the dough.
  • Place the roasted brinjal slices on top of the sauce spread.
  • Place onion, coriander leaves and capsicum on pizza and spread the shredded cheese above that. You can change the amount of cheese according to your taste. i have used it lavishly as i love cheese.
  • Close the pan and cook it on stove for 8-10min in mininum flame. Make sure NOT to increase the flame as it will burn the pizza.
