This is a Kerala style chicken cutlet recipe
Ingredients:
- Potatoes cooked and mashed - 3 medium
- Minced chicken - 1 cup
- Onion chopped - 1/2 medium onion
- Garlic chopped - 1 tbs
- Ginger chopped - 1 tbs
- Green chilli chopped - 2 medium
- Coriander powder - 1 tbs
- Chilli powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1 tsp
- Salt to taste
- Oil to fry / roast
- Oil for sauté - 1 tbs
- Bread crumbs - 2 cups
- Egg - 1
Method:
- Heat oil for sauté in a pan
- Add onion, ginger, garlic and green chilli and sauté for 3-4 minutes till the raw smell is gone
- Add ingredients from 7 to 11 and sauté for one more minute in medium flame
- Add minced chicken to the above and fry it
- Once chicken is cooked, add mashed potato to it and mix well
- Switch off the flame
- Make small balls of cutlet mixture once the mixture reaches room temperature
- Flatten the ball and make the cutlet shape
- Heat oil in a pan for frying the cutlet
- Break the egg to a bowl
- Dip the cutlet in egg and then dip it in bread crumbs
- Once the cutlet is uniformly coated with bread crumbs, fry it in hot oil till the cutlet is firm and both sides are browned
- Repeat the same for the rest of cutlets
- Cutlets are now ready to be served
Cutlets can be enjoyed best with ketchup!
