Ingredients:
- Idli batter - 1.5 cups
- Mustard seeds - 1/4 tsp
- Curry leaves - few
- Pepper corns - 1 tsp
- Dried dry chilli - 1
- Ginger, chopped - 1/2 tsp
- Shallots, chopped - 1/4 cup
- Carrot, shredded - 1/4 cup(optional)
- Oil/Ghee - 1 tbs + for frying
Appa chatti or Paniyaram pan
Method:
- Heat 1 tbs of oil for tempering
- Splutter mustard seeds in it.
- Fry curry leaves, pepper,ginger, shallots and dried chilli in the oil and switch off the flame
- Mix the above and carrots with idli batter
- Heat appa chatti or paniyaram pan
- Fill 1/2 of each cup with oil
- Once the oil is hot, spoon the batter in to each cup and cook till the paniyarams are browned(Flip over in between to brown both sides)
Serve paniyarams with chutney or sambar
